The Makers' Inspiration
Our acclaimed Great Taste 2 Star Coppa is so popular that it's often out of stock. To address this, Master Butcher David has created this exquisite spalla, using his whole-carcass butchery skills to craft a delectable alternative from the adjacent cut to the coppa.
How We Make It
This new spalla is made following the same recipe as our Coppa, benefiting from the ideal blend of internal fat and flavorful pork shoulder meat. We cure this unique cut with a touch of salt, age it until it achieves the perfect texture, and then slice it thinly.
Tasting Notes
This spalla offers a rich, ham-like flavor that's meaty and savory, with a creamy texture from the fat marbling throughout each slice. It's excellent on a charcuterie board, in sandwiches, on pizzas, or as a canapé component.

Spalla sits between lomo and coppa in terms of cured meat richness, so it pairs well with something that bridges the gap between the session ales suited for lomo and the IPAs recommended for coppa. Rebellion's Hazy Pale, with its hoppy and citrusy notes, complements this well-flavored ham beautifully.
