The Makers' Inspiration
The inspiration struck at a market stall outside Archway tube station after a Saturday football match—an unforgettable experience. The unique texture and taste of 'nduja make it a pleasure to produce, especially as it allows for a nose-to-tail approach, using every part of the pig and embracing its high fat-to-meat ratio.
How We Make It
For our nose-to-tail fans, we use softer fats not suited for other salamis, along with flavorful pork trimmings from various cuts. This blend is combined with authentic Calabrian chilies and a few of our secret ingredients to create the perfect 'nduja.
