Meet/meat our cocktail salami—or rather, a cocktail encased in salami. Infused with local spirits and vibrant fruit, this salami elevates gamey, wild venison to new heights, perfect for tapas nights.
The Makers' Inspiration
The idea was straightforward: "We need something special for venison... it’s gamey, so let’s add fruit and freshness. And we love a bit of booze. Aha!" This inspiration is partly due to founder Alex’s fondness for an Old Fashioned cocktail.
How We Make It
Locally sourced wild venison is carefully trimmed in a nose-to-tail process. A touch of pork fat is added for texture, then we incorporate local barrel-aged rum, orange, herbs, and spices. The salami is fermented and matured for several weeks, allowing the flavors to blend and the texture to firm up.
Tasting Notes
Inspired by the Old Fashioned cocktail, expect notes of smoke, oak, citrus, and alcohol to enhance the rich flavor of wild venison. It pairs wonderfully with rum, whisky, or sweet wines, making it an excellent choice for a simple yet elegant tapas spread.

Ingredients British Wild Venison, British Heritage Breed Pork, Salt, British Wine (Sulphites), Local Rum, Dextrose, Peppercorns, Orange, E251, E250, Culture Allergens Contains sulphites. Cured in a factory which handles milk.
